Hey Ishes, I'm here to share my Top 5 Paleo Instant Pot Dinners! Meal planning is my least favorite chore, I always have a few recipes on rotation that we love for our instant pot! If you don’t have an instant pot, you need one! I LOVE ours. In fact, I love it so much that we own a large and small one.
#1: Instant Pot Sausage and Peppers
With 3 kids in our house, I swear if it isn’t chicken nuggets, they won’t all eat. And heck, even then it is a crapshoot, let’s be honest. BUT, they all LOVE Italian sausage. For this recipe, we serve the adults with the peppers and the kids without. Then, we pick a quick side. Sometimes it is healthy with a veggie, other times it is french fries. Every member of the family loves this recipe so much!
#2: Instant Pot Mexican Shredded Chicken
The best part about this recipe, besides how stinking easy it is, is that it is so dang versatile! Seriously, want chicken tacos? Done! Want a burrito bowl? Yep! Want to make some nachos? Easy! In fact, if you make it and put on top of these chips you will have delicious nachos! These chips are a staple in my house, you may have seen me mention them here in my Top 5 Paleo Must-Haves.
#3: Whole 30 Instant Pot Chicken Tortilla-Less Soup
This soup is so easy! And super flavorful! If you are like me and like basically all things Mexican food, then this soup is a must have! And it reheats and freezes beautifully!
#4: Instant Pot Lemon Pepper Salmon
It wasn’t until I went AIP paleo to help battle my chronic Lyme, that I actually began to eat and enjoy salmon regularly. This recipe is just a super simple on that is great for a quick but tasty meal!
#5: Instant Pot BBQ Chicken
What I love most about this recipe is that it is one that the whole family can enjoy in a number of ways. For example, my kids will eat this on a roll, and my husband and I will put it on a sweet potato with other garnishes. And it reheats so well! I have also been known to use this on nachos or even a salad!
